Chicken Pot Pie Soup FAQs

When it comes to storing leftover soup, you’re in luck – most soups can be safely stored in an airtight container in the refrigerator for up to three days. However, when it comes to freezing creamy soups like this chicken pot pie soup with potatoes, things get a bit trickier. Soups that contain dairy tend to separate and may even become mushy when thawed, which is definitely not ideal. But don’t worry, there are still plenty of ways to make this soup your own! For example, you can easily turn it into a vegetarian or vegan option by swapping out the chicken for chickpeas and using a vegetarian broth and dairy-free milk like almond milk. Just keep in mind that if you choose to use coconut milk instead, it will give the soup a slightly different flavor. And if you’re looking to make this soup gluten-free as well, there are plenty of options available. Simply substitute in some gluten-free flour to thicken the soup and omit or substitute the traditional biscuits on top with some gluten-free crackers or biscuits.

Chicken Pot Pie Soup

Chicken pot pie soup is the epitome of comfort food, and with its heart-shaped biscuit topping, it’s a truly special treat. This creamy, dreamy recipe has become one of my go-to soups, and for good reason – it’s an absolute delight to both make and devour. With only 30 minutes of prep time required, this indulgent soup is surprisingly quick to prepare, and the payoff is well worth the minimal effort. After a mere 40 minutes in the kitchen, you’ll be rewarded with a hearty, satisfying serving for six that’s sure to become a family favorite.

Instructions

As you prepare your oven according to the can of biscuits’ instructions, begin by melting one Tablespoon of butter in a small microwave-safe bowl. Add a sprinkle of parsley, garlic powder, and a pinch of salt. Next, open the biscuit can and use a heart-shaped cookie cutter to transform each biscuit into a charming heart shape. Arrange the hearts on a baking sheet and brush the tops with the melted butter mixture. Once baked, carefully monitor the biscuits’ color to prevent over-browning. Meanwhile, in a large pot, combine oil, onions, celery, and mushrooms. Sauté for approximately 10 minutes to soften and add some colour to the vegetables. Then, add butter, soup seasonings, and flour, stirring continuously for a few minutes to cook the flour. Next, introduce chicken broth and lemon juice. Add potatoes, chicken, carrots, and peas, allowing the soup to reach a boil before reducing heat to simmer for 20 minutes or until the potatoes are tender. Finally, add cream and parsley, letting it simmer for an additional 5 minutes. Remove from heat and serve with fresh parsley and a heart biscuit (or two!) on top.

Notes

To achieve a heartier soup, consider adding a cornstarch slurry to thicken it up. To prepare the slurry, combine 2 Tablespoons of cornstarch with ⁵ cup of cold water in a small bowl until the mixture is smooth and uniform. Then, introduce this slurry into your soup by starting with half of the total amount, allowing the soup to briefly come to a boil before deciding whether to add the remaining half.
